Ingredients
  

  • 8 oz dried pasta of choice
  • 1 Tablespoon olive oil
  • 1/2 cup finely chopped onion
  • 3-4 cloves minced garlic
  • 1 Tablespoon butter (unsalted preferred)
  • 1 pound chicken breasts, cut into bite-size
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon smoked paprika (regular if preferred)
  • 1/2 cup heavy cream
  • 1 cup grated parmesan cheese
  • 1/2 cup chopped fresh basil
  • Salt and black pepper to taste

Instructions
 

  • Bring a large pot of salted water to a boil. Cook pasta according to package directions, reserving 1/2 cup pasta water before draining.
  • Heat olive oil and butter in a large oven-safe skillet over medium heat. Cook onion 3 minutes, then add garlic and Italian seasoning; cook 1 minute more.
  • Add chicken pieces to the pan, season with black pepper and salt, and cook 5-7 minutes until browned and almost cooked through.
  • Stir in sun-dried tomatoes, smoked paprika, and heavy cream. Cook 2-3 minutes until sauce thickens.
  • Add drained pasta and reserved pasta water to the pan; stir to coat. Toss with half the basil and Parmesan (add more to taste).
  • Transfer to oven-proof dish or into heated pot. Garnish with remaining basil and serve with extra Parmesan, if desired.

Notes

For halal option, use halal-certified parmesan; alternative: nutritional yeast or vegan Parmesan-style seasoning
Use thighs instead of breast for more moisture if needed
Sun-dried tomatoes in oil can be drained to reduce fat
Leftovers keep in fridge 3 days
