  • 1 pound lean ground beef
  • 1 cup chunky salsa Use your favorite brand.
  • 1 can red enchilada sauce (10 oz)
  • 8 pieces tortillas (8-inch, flour preferred)
  • 1 package Borden® Cheese Thick Cut Shredded Four Cheese Mexican (8 oz) Approximately 2 cups of cheese.

Instructions
 

Preparation

  • Preheat the oven to 350°F. Lightly spray a 9×13-inch baking dish.
  • Brown the ground beef in a skillet over medium-high heat. Drain any excess fat. Stir in the salsa and heat through.
  • Pour half of the enchilada sauce into the prepared dish.
  • Warm the tortillas, fill each with the meat mixture and cheese, roll them up, and place them in the dish seam-side down.
  • Pour the remaining sauce over the enchiladas, top with cheese, and cover with foil.

Baking

  • Bake for 30-35 minutes, or until the cheese is melted and bubbly.

Notes

Serve hot with toppings like sour cream, guacamole, or fresh cilantro. Pair with rice or a simple salad. For extra flavor, consider adding spices like cumin or chili powder to the beef.
