  • 2 tablespoons olive oil

  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 tablespoon butter
  • 1 small onion, sliced thinly
  • 1 cup sliced mushrooms
  • 1 cup heavy cream Can be substituted with low-fat milk or non-dairy alternative for a lighter version.
  • 1/2 cup chicken broth
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder For the sauce
  • 1/4 teaspoon thyme
  • 1 cup shredded cheddar cheese

Preparation

  • Pat the chicken breasts dry. Season them with salt, pepper, garlic powder, and paprika.
  • Heat olive oil in a skillet over medium-high heat. Cook the chicken for 6-7 minutes on each side until golden brown and reaches 165°F. Remove the chicken and set it aside.

Cooking

  • In the same skillet, melt butter over medium heat. Add the sliced onion and cook for 3-4 minutes until it softens.
  • Add the sliced mushrooms and cook for another 4-5 minutes until they are tender.
  • Pour in the heavy cream and chicken broth, stirring well. Add in Dijon mustard, Worcestershire sauce, garlic powder, thyme, salt, and pepper. Let this mixture simmer for 5-7 minutes until it thickens.
  • Stir in the shredded cheddar cheese until it melts and becomes smooth.
  • Return the cooked chicken to the skillet. Spoon the creamy sauce over the chicken and heat through for another 2-3 minutes.

Serving

  • Serve immediately, making sure to spoon the sauce over the top.

Notes

To store leftovers, let the chicken cool down and then place it in an airtight container. Keep it in the refrigerator for up to 3 days. Reheat in the microwave or on the stove until heated through. Feel free to customize the sauce by adding other vegetables like bell peppers or spinach for extra flavor and nutrition. For added heat, sprinkle in cayenne pepper or red pepper flakes.
