Ingredients
  

  • 24 ounces chuck ground (80/20 recommended)
  • 8 slices American cheese
  • 4 hamburger buns (potato or brioche-style)
  • Kosher salt, to taste
  • Freshly cracked black pepper, to taste
  • 1-2 tsp neutral oil (avocado or vegetable, optional)

Instructions
 

  • Heat cast iron skillet over high heat until extremely hot
  • Portion 3 ounces of ground chuck into 8 equal patties
  • Smash patties into thin 4-inch rounds using a spatula
  • Season both sides immediately with salt and pepper
  • Cook 1-2 minutes per side until deep golden crust forms
  • Place cheese slice on each patty in the last 30 seconds of cooking
  • Toast buns on the skillet or grill
  • Assemble burgers with lettuce, tomato, and condiments of choice

Notes

Use 80/20 ground chuck for optimal juiciness
Addition of American cheese is optional; cheddar slices work well
For gluten-free version, use certified gluten-free buns
Preheat pan 2-3 minutes if oil is needed to prevent sticking
