  • 1 head romaine lettuce, chopped Make sure to wash and dry thoroughly
  • 1 cup cherry tomatoes, halved
  • 1 cup diced cucumber
  • 1/2 cup diced red onion
  • 1/2 cup crumbled feta cheese Can substitute with other cheeses
  • 1/2 cup dried cranberries Adjust according to taste preference
  • 1/2 cup cooked and crumbled bacon Omit for a vegetarian version
  • 1/4 cup toasted walnuts

Dressing Ingredients

  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste

Preparation

  • In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, cucumber, red onion, feta cheese, cranberries, bacon, and walnuts.
  • In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper to make a dressing.
  • Pour the dressing over the salad and toss well to combine.

Serving

  • Serve immediately, either chilled or at room temperature.

Notes

Store leftovers in an airtight container in the refrigerator. Keep the dressing separate until ready to serve to avoid soggy salad. Best eaten within 1-2 days. Add sliced radishes or bell peppers for extra crunch.
