Ingredients
  

  • 1 pound ground beef (90/10 or 80/20)
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 (15-ounce) can red enchilada sauce
  • 1 (9-ounce) package refrigerated cheese tortellini
  • 1 cup shredded Mexican cheese blend
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/4 cup chopped cilantro (optional)

Instructions
 

  • Heat olive oil in a skillet over medium heat.
  • Sauté diced onion until translucent.
  • Add minced garlic and cook until fragrant.
  • Brown ground beef with onions and garlic.
  • Stir in red enchilada sauce and simmer for 5 minutes.
  • Cook tortellini according to package instructions.
  • Add cooked tortellini to the skillet and stir to combine.
  • Sprinkle shredded cheese over the mixture and cook until melted.
  • Simmer under a lid for 2-3 minutes to thicken the sauce.
  • Garnish with cilantro before serving if desired.

Notes

Use 90/10 ground beef to reduce fat if needed
Frozen tortellini requires 5-7 minutes additional cooking time
Store any unused store-bought enchilada sauce in the fridge for 5 days
For a cheesy finish, melt extra cheese in the microwave before adding to final dish
