Ingredients
  

  • 8 ounces fettuccine
  • 2 large chicken breasts, sliced into cutlets
  • 4 ounces cream cheese, softened
  • 1 cup Parmesan cheese, freshly grated
  • 1 cup heavy cream
  • 1/4 cup chicken broth
  • 2 cloves garlic, minced
  • 3 tablespoons butter, divided
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder

Instructions
 

  • Boil a large pot of salted water and cook fettuccine to al dente according to package directions, then drain while reserving a small cup of pasta water.
  • Slice chicken breasts lengthwise into thin cutlets and season with garlic powder and desired salt/pepper.
  • In a large skillet, heat 1 tablespoon of butter and the olive oil over medium-high heat. Sear chicken cutlets until golden brown and cooked through, then remove from the pan.
  • In the same skillet, melt the remaining 2 tablespoons of butter and sauté minced garlic until aromatic.
  • Whisk in the heavy cream and chicken broth, bringing to a gentle simmer.
  • Add the softened cream cheese and whisk constantly until melted and smooth.
  • Stir in the Parmesan cheese until the sauce thickens and emulsifies.
  • Return the chicken to the pan to coat, then toss with the cooked pasta adding reserved pasta water as needed to reach your desired consistency.

Notes

Use freshly grated Parmesan to ensure the sauce melts smooth without graininess. If the sauce becomes too thick, add a small splash of reserved pasta water until reaching the perfect coating consistency. You can substitute with gluten-free pasta if needed.
