Ingredients
  

  • 4 large bone-in chicken thighs
  • 3 tbsp honey
  • 1 1/2 tsp chipotle chili powder
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp + 1/2 tsp sea salt
  • 1/2 tsp freshly ground black pepper
  • 2 lbs russet potatoes
  • 1 cup warm whole milk
  • 2 tbsp unsalted butter
  • 4 oz freshly shredded smoked Gouda

Instructions
 

  • Preheat oven to 400°F (200°C)
  • In a bowl, whisk together honey, chipotle chili powder, olive oil, garlic powder, 1 tsp sea salt, and black pepper. Add chicken thighs, toss to coat, and refrigerate to marinate for 30 minutes
  • Place chicken thighs skin-side up on a baking sheet. Roast for 35-40 minutes until skin is crisp and internal temperature reaches 165°F
  • Meanwhile, peel and cut russet potatoes into 1-inch cubes. Boil in salted water until tender (~15-20 minutes). Drain but keep warm
  • In a separate saucepan, warm milk and melt 1 tbsp butter. Stir in shredded smoked Gouda until melted
  • Add cooked potatoes, remaining 1 tbsp butter, and 1/2 tsp additional salt to the cheese mixture. Mash until smooth and season to taste
  • Rest chicken thighs for 5 minutes before serving with smoked Gouda mash

Notes

For best results, pat chicken thighs dry before marinating
Adjust chipotle chili powder quantity based on spice tolerance
Use a ricer or hand masher for optimal potato texture
Leftover mash stores well refrigerated for up to 3 days
Serve with green beans or salad for balance
