  • 6-8 cups fresh apples (Macoun or Macintosh), peeled and sliced
  • 1.5 cups old fashioned rolled oats
  • 1 cup all-purpose flour
  • 1 cup dark brown sugar
  • 8 Tbsp unsalted butter, cold and cubed
  • 2 Tbsp arrowroot starch
  • 2 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/2 tsp almond extract

Instructions
 

  • Place a rimmed baking sheet lined with foil in the oven and preheat to 350°F.
  • Grease a 10-inch cast iron skillet with butter or non-stick spray.
  • In a medium bowl, combine oats, flour, brown sugar, cinnamon, and salt.
  • Cut the cold butter into the flour mixture using a pastry blender until large crumbs form.
  • Chill the crumble topping in the freezer while preparing the fruit.
  • In a large bowl, whisk together sugar, arrowroot starch, cinnamon, and salt.
  • Add the sliced apples and almond extract to the bowl and toss until evenly coated.
  • Transfer the apple mixture into the prepared skillet.
  • Top evenly with the chilled oat crumble.
  • Place the skillet on the preheated baking sheet in the oven.
  • Bake for 60 minutes until the topping is golden brown and the fruit is bubbling.

Notes

Use Macoun or Macintosh apples for the best breakdown and flavor. If you prefer a different texture, you can substitute arrowroot starch with cornstarch in equal amounts. You may swap all-purpose flour for almond flour for a slightly nuttier profile. Keep the butter cold throughout the process for the best texture in the topping.
