  • 9 ounces cheese-filled tortellini
  • 1 can (10 oz) enchilada sauce
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder

Preparation

  • In a large skillet, heat olive oil over medium heat. Add the diced onion and garlic, and sauté until softened.
  • Add the ground beef, and cook until browned; season with cumin, chili powder, salt, and pepper.
  • Stir in the enchilada sauce and bring to a simmer.
  • Cook the tortellini according to package directions, then drain and add to the beef mixture.
  • Stir in the shredded cheese and mix until melted and combined.
  • Serve hot, garnished with fresh cilantro if desired.

Notes

For a richer flavor, try using a blend of cheeses such as mozzarella and pepper jack. Add vegetables like bell peppers or zucchini for extra nutrition. Adjust the spice level to your taste.
