  • 2 medium Cucumbers Thinly sliced
  • 1 teaspoon Sea Salt For drawing out moisture
  • 1 cup Sour Cream or Greek yogurt Use Greek yogurt for a lighter option
  • 1 clove Garlic Minced; adjust based on taste preference
  • 2 tablespoons Fresh Dill Chopped
  • 1 teaspoon Black Pepper
  • 2 tablespoons White Vinegar
  • 1/2 medium Red Onion Chopped

Preparation

  • Slice the cucumbers thinly and place them in a bowl.
  • Add sea salt and allow them to sit for about 10 minutes to draw out moisture.
  • In a separate bowl, mix together the sour cream or Greek yogurt, minced garlic, chopped fresh dill, black pepper, and white vinegar until well combined.
  • Drain excess liquid from the cucumbers and stir in the chopped red onion.
  • Pour the dressing over the cucumbers and toss until evenly coated.
  • Chill in the refrigerator for at least 30 minutes before serving.

Notes

For extra crunch, try adding thinly sliced bell peppers or radishes. This salad can be made ahead of time and stored in the refrigerator for up to three days. It may release more water, so drain a little liquid before serving if it sits for too long.
