Preparation

  • Add the chopped onion and minced garlic, and sauté until they are softened.

  • Once it boils, reduce the heat and let it simmer for about 15 minutes.
  • Stir in the heavy cream and season with salt and pepper to taste.

Dumpling preparation

  • In a separate bowl, combine the flour, baking powder, garlic powder, and cayenne pepper.
  • Add the milk and melted butter to the dry ingredients, and mix until just combined.
  • Drop spoonfuls of the dumpling mixture onto the simmering soup.
  • Cover the pot and cook for 10-15 minutes until the dumplings are cooked through.
  • Stir in the shredded cheddar cheese just before serving.

Notes

This soup is best served warm. Garnish with fresh herbs or extra cheese. Serve with crusty bread or crackers. Use fresh herbs like basil or oregano to enhance the flavor. For a thinner soup, add a bit more vegetable broth when cooking. Don't overmix the dumpling mixture; it should be lumpy for the best texture.
