  • 2 cups cooked pasta Use your favorite type of pasta.
  • 1 can white beans, drained and rinsed Alternatively, use chickpeas or kidney beans.
  • 6 slices bacon, chopped For a vegetarian version, skip the bacon.
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 teaspoon thyme
  • to taste Salt and pepper
  • 2 cups spinach or kale You can also use Swiss chard or arugula.
  • for serving Grated Parmesan cheese Add additional cheese for extra flavor.

Preparation

  • In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon and set it aside, leaving the drippings in the pot.
  • In the same pot, add the diced onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute.

Cooking

  • Pour in the chicken or vegetable broth, add the white beans, cooked pasta, thyme, salt, and pepper. Bring to a simmer.
  • Stir in the spinach or kale and cook until wilted.

Serving

  • Serve hot, topped with the crispy bacon and grated Parmesan cheese.

Notes

To store leftovers, let the soup cool completely before transferring it to an airtight container. It can be kept in the refrigerator for up to 3 days. Reheat on the stove over medium heat until warmed through. If the soup thickens too much, you can add a bit of broth or water to reach your desired consistency. This soup pairs well with crusty bread, a simple green salad, or even a light sandwich.
