Ingredients
  

  • 2 chicken breasts, sliced into 4-6 thin cutlets
  • 1 egg, whisked
  • 1/4 cup milk
  • 1/2 cup breadcrumbs
  • 1/2 cup panko breadcrumbs
  • 4 Tbsp salted butter, softened
  • 1/2 cup mayonnaise
  • 2 Tbsp mayonnaise (for butter spread)
  • 3-4 cloves garlic, minced
  • 1/4 cup Parmesan cheese, finely grated
  • 3-4 cups romaine lettuce, shredded
  • 1 tsp anchovy paste
  • 1 tsp fresh parsley, chopped
  • Salt, pepper, and garlic powder to taste
  • Oil for frying

Instructions
 

  • Slice chicken breasts horizontally into 4-6 evenly thin cutlets.
  • In a shallow bowl, whisk egg, milk, salt, pepper, and a pinch of garlic powder.
  • In a second bowl, combine breadcrumbs and Panko.
  • Dip each cutlet into the egg mixture then coat thoroughly in the breadcrumb mixture.
  • Heat 1 inch of oil in a skillet over medium-high heat.
  • Fry cutlets until golden brown and cooked through, about 3-4 minutes per side.
  • Drain chicken on paper towels.
  • Prepare garlic butter by mixing softened butter, 2 Tbsp mayo, minced garlic, parsley, and Parmesan.
  • Spread garlic butter mixture inside split hoagies and toast until golden.
  • In a bowl, mix remaining 1/2 cup mayo with anchovy paste and a splash of lemon juice to taste.
  • Assemble sandwiches by layering the crispy chicken, Caesar dressing, and romaine lettuce inside the toasted buns.

Notes

Ensure chicken is sliced thinly to allow for quick frying and uniform crispiness. For an extra crunch, toast the hoagie rolls cut-side down in a skillet until crisp before adding the chicken. Store leftover dressing in an airtight container for up to 3 days. Use a high-quality, full-fat mayonnaise for the best flavor profile.
