Ingredients
  

  • Cooked chicken, chopped - 2 1/2 cups (2 breasts or 14 oz)
  • Dried cranberries, chopped - 1/2 cup
  • Pecans, chopped - 1/3 cup
  • Celery, diced - 1/3 cup (1 stalk)
  • Green onion, chopped - 1/4 cup (2 pieces)
  • Mayonnaise - 3/4 cup
  • Lemon juice - 4 teaspoons
  • Honey - 1 tablespoon
  • Garlic powder - 1/4 teaspoon
  • Salt to taste

Instructions
 

  • Chop cooked chicken into 1/2-inch pieces
  • In a bowl, whisk mayonnaise, lemon juice, honey, garlic powder, and salt
  • Add cranberries, pecans, celery, and green onion to the bowl; mix well
  • Refrigerate for 10-15 minutes to chill
  • Serve as a salad, on rolls, or croissants as desired

Notes

Use pre-cooked or leftover chicken for convenience
Chopped dried cherries or raisins can replace cranberries
