Ingredients
  

  • 1.5 lbs chicken breasts
  • 2 cans (15 oz each) white beans (cannellini or Great Northern), drained
  • 1 cup frozen corn
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cans (4-oz each) diced green chilies
  • 4 cups low-sodium chicken broth
  • 1 tsp cumin
  • 1 tsp dried oregano
  • 1 tsp chili powder
  • 1/4 tsp cayenne pepper
  • Salt and black pepper to taste
  • 4 oz cream cheese, softened
  • 1/2 cup sour cream

Instructions
 

  • Place the chicken breasts at the bottom of the slow cooker.
  • Add the drained beans, corn, chopped onion, minced garlic, and green chilies on top of the chicken.
  • Pour the chicken broth over the ingredients.
  • Sprinkle in the cumin, oregano, chili powder, cayenne, salt, and pepper.
  • Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours until chicken is tender.
  • Carefully remove the chicken from the pot and shred it using two forks.
  • Stir the cream cheese and sour cream into the slow cooker until smooth and melted.
  • Return the shredded chicken to the pot and stir to combine.
  • Serve warm with your preferred toppings like cilantro, lime, or avocado.

Notes

Use chicken thighs for an even richer, juicier result. If the soup is too thick, add a splash more chicken broth. Store leftovers in an airtight container in the refrigerator for up to 3 days. This recipe is completely pork-free and alcohol-free.
