Ingredients
  

  • 1 tablespoon olive oil
  • 2 teaspoons minced garlic
  • 1/4 cup chipotle chilis in adobo
  • 1 cup unsalted chicken stock
  • 1 cup crushed tomatoes
  • 1 teaspoon kosher salt
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon black pepper
  • 2 (6-ounce) boneless skinless chicken breasts
  • 1 teaspoon taco seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 10 (6-inch) flour tortillas
  • 2 cups shredded cheddar and Monterey Jack cheese
  • Green onions and cilantro for garnish

Instructions
 

  • Preheat oven to 375°F.
  • Heat olive oil in a skillet, add chicken and cook until browned (5 minutes).
  • Add garlic, chipotle chilis, stock, crushed tomatoes, salt, cumin, chili powder, and black pepper.
  • Blend sauce until smooth and simmer 10 minutes.
  • Shred chicken and mix with taco seasoning and pepper in the sauce.
  • Assemble enchiladas with tortillas (no fill), top with chicken mixture and cheese.
  • Bake 20 minutes until bubbly and golden. Garnish with onions and cilantro.

Notes

Use avocado oil for higher smoke point
Thin sauce with additional stock if too thick
Swap tortillas for corn if preferred
Add jalapeños or avocado as garnish
