Ingredients
  

  • Fresh chicken breasts (1½ pounds, boneless and skinless)
  • Lemon juice (3 tbsp, from 1 large lemon)
  • White wine vinegar (1 tbsp)
  • Dried oregano (2 tbsp + es)
  • Garlic powder (1 tsp + 1 tsp)
  • Ground thyme (½ tsp)
  • Kosher salt (1 tsp, adjust if not using kosher salt)
  • Uncooked white rice (1½ cups)
  • Cucumber (1 large, sliced)
  • Ripe tomatoes (2-3 medium, chopped)
  • Crumbled feta cheese (1 cup)
  • Extra virgin olive oil (2 tbsp)
  • Black pepper (to taste)
  • Optional: red onion (½ small, thinly sliced)

Instructions
 

  • Prepare chicken marinade: In a bowl, combine lemon juice, white wine vinegar, 2 tbsp oregano, 1 tsp garlic powder, thyme, and 1 tsp salt
  • Massage marinade into chicken breasts (split in half), covering evenly
  • Cover and refrigerate to marinate for at least 30 minutes or up to 8 hours
  • Cook rice: Prepare 1½ cups uncooked rice according to package instructions
  • Heat 1 tbsp oil in a skillet and cook chicken over medium-high heat for about 4-5 minutes per side until browned and cooked through
  • Let chicken rest 5 minutes before slicing
  • Prepare salad: Combine cucumber, tomatoes, crumbled feta, sliced red onion (if using), 1 tsp oregano, 1 tsp garlic powder, 1 tbsp olive oil, salt, pepper
  • Assemble bowls: Serve sliced chicken and warm rice in bowls; top with salad and a lemon wedge

Notes

Use chicken thighs for tender results
Cucumber seeds can be removed for crisp texture
Adjust marination time based on schedule
Salad can be refrigerated ahead of time
Use olive oil instead of adding extra fat
Optional: add pita bread or olives for a full Mediterranean touch
