Ingredients
  

For the Meatballs

  • 1 pound ground turkey Use lean ground turkey for a healthier option.
  • 1/2 cup breadcrumbs Regular or gluten-free breadcrumbs can be used.
  • 1/4 cup grated Parmesan cheese For added flavor.
  • 1/4 cup chopped fresh parsley For garnish and flavor.
  • 1 large egg To bind the ingredients.
  • 2 cloves garlic, minced Enhances flavor.
  • 1 teaspoon dried oregano Can adjust to taste.

For the Rice

  • 1 cup rice Choose your preferred type of rice.
  • 2 cups chicken broth For cooking the rice.
  • 1 tablespoon olive oil For toasting the rice.

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a bowl, combine ground turkey, breadcrumbs, Parmesan cheese, parsley, egg, garlic, oregano, salt, and pepper. Mix until well combined.
  • Shape the mixture into meatballs and place them on a baking sheet.

Cooking

  • Bake the meatballs for 20-25 minutes or until cooked through and golden.
  • Meanwhile, in a pot, heat olive oil over medium heat. Add rice and toast for 1-2 minutes.
  • Add chicken broth, lemon juice, and zest to the pot. Bring to a boil, then reduce heat and cover. Cook for about 15 minutes or until rice is tender and liquid is absorbed.

Serving

  • Serve the meatballs warm on top of the lemon herb rice. Garnish with additional parsley if desired.

Notes

Use fresh herbs for the best flavor. If you don't have fresh parsley, dried parsley will work too, but use half the amount. Don't overmix the meatball mixture to keep them tender. Adjust the amount of lemon juice based on your taste preference, adding more for a zestier kick. Store leftovers in an airtight container in the refrigerator for 3-4 days, or freeze separately for up to three months.
