  • 2 cups golden potatoes, diced Cut into even-sized pieces for even cooking
  • 1 tablespoon taco seasoning

Toppings

  • shredded cheese Use your preferred type of cheese
  • fresh salsa
  • avocado, sliced
  • sour cream

Serving Base

  • rice, quinoa, or lettuce Choose one for serving

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Toss the diced golden potatoes with a little oil and season with salt. Spread them on a baking sheet and roast for 25-30 minutes, flipping halfway through, until crispy and golden.

Cooking

  • In a skillet over medium heat, add the ground beef and taco seasoning. Cook until the beef is browned and cooked through.

Assembly

  • Combine the cooked beef and roasted potatoes in a bowl.
  • Serve with your choice of rice, quinoa, or lettuce, and top with shredded cheese, fresh salsa, avocado, and sour cream.
  • Customize with any additional toppings as desired.

Notes

Store leftovers in an airtight container in the refrigerator for about 3-4 days. If you have leftover toppings, store them separately to keep them fresh.
