  • 1 piece Bell pepper, diced Any color bell pepper can be used.
  • 1 piece Onion, diced White or yellow onion works well.
  • 2 cups Cooked brown rice Use leftover rice for a quicker meal.
  • 2 tablespoons Soy sauce Low sodium soy sauce can be used as a healthier alternative.
  • 1 tablespoon Olive oil For sautéing the vegetables.
  • to taste Salt and pepper Adjust according to your taste.
  • Optional toppings: green onions, sesame seeds For extra flavor and crunch.

Cooking

  • In a large skillet, heat olive oil over medium heat.
  • Add diced onion and bell pepper, and sauté until softened.
  • Add ground beef and cook until browned, breaking it up as it cooks.
  • Stir in soy sauce, salt, and pepper.
  • Serve over cooked brown rice and top with optional toppings if desired.

Notes

To store leftovers, place them in an airtight container and keep them in the fridge for up to three days. You can also freeze the beef and pepper mixture for up to three months.
