Ingredients
  

  • Boneless, skinless chicken breasts - 4
  • Olive oil - 1/4 cup
  • Lemon juice - Juice of 2 lemons
  • Garlic, minced - 3 cloves
  • Dried oregano - 2 teaspoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cooked quinoa or rice - 4 cups
  • Cucumber - 1, sliced
  • Cherry tomatoes - 1 cup, halved
  • Red onion - 1/4 cup, finely chopped
  • Crumbled feta cheese - 1/2 cup
  • Fresh parsley - 1/4 cup, chopped
  • Tzatziki sauce - 1 cup

Instructions
 

  • Marinate the chicken: In a bowl, mix the olive oil, lemon juice, minced garlic, oregano, salt, and black pepper. Add the chicken breasts and let marinate for at least 30 minutes.
  • Prepare quinoa or rice: Cook according to package instructions while the chicken marines. Set aside.
  • Grill or pan-sear the chicken: Heat a grill pan or skillet to medium-high. Cook the chicken for 6-7 minutes per side or until fully cooked. Let rest briefly before slicing into strips.
  • Assemble the bowls: Divide cooked quinoa or rice between four bowls. Top with sliced chicken, cucumber, cherry tomatoes, red onion, crumbled feta, fresh parsley, and a dollop of tzatziki. Serve immediately.

Notes

Use chicken thighs for a richer flavor; adjust cooking time to 6-8 minutes per side.
Extra virgin olive oil is ideal for flavor, but avocado oil can be used for a higher smoke point.
Bottled lemon juice is acceptable in a pinch; add zest for extra brightness.
For a vegan alternative, swap feta for vegan cheese and use chickpeas instead of chicken.
