Ingredients
  

  • Small-curd cottage cheese, well-drained
  • 1 (24 oz) container or 2 cups
  • Large yellow onions
  • 2
  • Large eggs
  • 3
  • Cornstarch
  • 1 tablespoon
  • Shredded Gruyère cheese
  • 1 cup (3/4 cup + 1/4 cup)
  • Fresh thyme leaves
  • 1 teaspoon
  • Unsalted butter
  • 1 tablespoon
  • Salt
  • 1/2 teaspoon
  • Black pepper
  • 1/4 teaspoon

Instructions
 

  • Preheat oven to 375°F (190°C) and butter a 9x13-inch baking dish
  • Thinly slice onions, sauté with 1 tsp butter in a large skillet over low heat for 25-30 minutes until deeply caramelized and golden
  • Drain cottage cheese thoroughly using a fine mesh strainer for at least 1 hour
  • In a blender or large bowl, puree cottage cheese until smooth
  • Beat in eggs, cornstarch, thyme, salt, and pepper until fully combined
  • Spread half the blended cottage cheese mixture into the prepared baking dish
  • Sprinkle 3/4 cup Gruyère evenly over the base
  • Pour remaining cottage cheese mixture on top
  • Dot with remaining 1/4 cup Gruyère and bake for 1 hour
  • Let rest at room temperature for 20-30 minutes before slicing

Notes

Drain cottage cheese for longer (up to 2 hours) for firmer texture
Use Emmental or Swiss cheese as Gruyère substitute
Room temperature eggs blend smoother into cottage cheese
For best sliceability, let cool completely before serving
