Ingredients
  

Main Ingredients

  • 1 lb ground beef can use ground turkey or chicken for a leaner option
  • 4 medium potatoes, sliced slice ahead of time and soak in water to prevent browning
  • 1 can cream of mushroom soup can use a gluten-free version if needed
  • 1 cup shredded cheddar cheese can substitute with mozzarella or pepper Jack
  • 1 medium onion, chopped
  • to taste Salt and pepper

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a skillet, brown the ground beef and onion over medium heat until fully cooked. Drain excess fat.

Assembly

  • In a greased baking dish, layer sliced potatoes, seasoned ground beef, and soup.
  • Sprinkle shredded cheese on top.

Baking

  • Cover with aluminum foil and bake for 1 hour. Then remove the foil and bake for an additional 15-20 minutes until the cheese is bubbly and golden.
  • Let it cool for a few minutes before serving.

Notes

Serve with a side salad or crusty bread. For extra creaminess, add a dollop of sour cream. Leftovers can be stored in the refrigerator for up to 3 days or frozen for 2-3 months. Can prepare in advance and refrigerate before baking.
