Ingredients
  

  • 1 teaspoon active dry yeast
  • 1 teaspoon sugar, honey, or maple syrup
  • 3/4 cup warm water (105-115°F)
  • 2 cups all-purpose flour
  • 1 teaspoon salt (sea salt or kosher salt)
  • 2 tablespoons chopped fresh herbs or 2 teaspoons dried herbs (optional)
  • 1 stick (4 oz / 1/2 cup) softened butter or vegan butter (unsalted)
  • 2 whole heads roasted garlic
  • 1 teaspoon olive oil (plus drizzle for roasting)
  • 1/4 cup chopped fresh herbs (optional, basil recommended)

Instructions
 

  • Preheat oven to 400°F (200°C)
  • Slice cloves from top of garlic and drizzle with olive oil
  • Wrap garlic heads in foil and bake for 50-55 minutes until golden and softened
  • Let roasted garlic cool slightly, then mash cloves into softened butter
  • Fold in additional olive oil, fresh herbs (optional), and a pinch of salt and pepper
  • Pulse in food processor briefly to create a smooth, silken emulsion (optional)
  • In a bowl, mix yeast, sugar, and warm water. Let rest until foamy
  • Combine flour, salt, and dried herbs (optional), add the yeast mixture and knead for 8-10 minutes
  • Let dough rise in a warm place for 1 hour (or 2 hours if using instant yeast)
  • Shape dough into 2 pizza crusts and top with the garlic butter sauce before baking

Notes

Roast garlic until tender—no oil needed if using unsalted butter
Swap half all-purpose flour with bread flour for a chewier crust
Garlic oil can replace some butter in the dough for added flavor
Store sauce in an airtight container in fridge for up to 1 month
Freeze dough for up to 3 months
