Peanut Butter Mixture

  • 1 cup peanut butter Ensure to use smooth peanut butter for best results.
  • 1/4 cup butter, softened Butter should be at room temperature for easy mixing.
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Chocolate Coating

  • 2 cups chocolate chips Milk chocolate recommended for a sweet coating.
  • 1 tablespoon coconut oil (optional) Use for a smoother coating.

Preparation

  • In a mixing bowl, combine the peanut butter and softened butter until smooth.
  • Gradually add the powdered sugar and vanilla extract, mixing until a thick dough forms.
  • Shape the mixture into egg shapes and place them on a baking sheet lined with parchment paper.
  • Chill in the refrigerator for at least 30 minutes to firm up.

Coating

  • In a microwave-safe bowl, melt the chocolate chips and coconut oil (if using) together until smooth.
  • Dip each peanut butter egg into the melted chocolate, ensuring they are fully coated.
  • Return to the baking sheet and refrigerate until the chocolate sets.

Notes

Store in an airtight container in the refrigerator for up to two weeks. Enjoy fresh or chilled.
