Ingredients
  

  • 8 ounces rigatoni
  • 1 tablespoon extra virgin olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 pound beef or turkey Italian sausage, casings removed
  • 14.5 ounces canned fire-roasted tomatoes
  • 1/4 teaspoon red chili flakes
  • 1 cup heavy cream, room temperature
  • 1 cup freshly grated Parmesan cheese
  • Fresh basil for garnish
  • Salt to taste

Instructions
 

  • Bring a large pot of salted water to a rolling boil and cook rigatoni until al dente, reserving 1 cup of pasta water before draining.
  • Heat olive oil in a large skillet over medium-high heat and brown the sausage, breaking it into crumbles.
  • Add the onion to the skillet and sauté until translucent, then add garlic and red chili flakes, cooking for another minute.
  • Stir in the canned fire-roasted tomatoes and simmer for 5 minutes to reduce slightly.
  • Reduce heat to low and stir in the heavy cream and Parmesan cheese until the sauce is smooth and creamy.
  • Add the cooked rigatoni to the skillet, tossing to coat thoroughly and adding reserved pasta water if needed to adjust consistency.
  • Serve immediately garnished with fresh basil.

Notes

Ensure you are using beef or turkey-based Italian sausage to keep this recipe free of pork. Freshly grated Parmesan melts much smoother than pre-shredded varieties. If the sauce becomes too thick, stir in an extra splash of the reserved starchy pasta water.
