Ingredients
  

For the Marinade

  • 4 tablespoons soy sauce
  • 2 tablespoons sake
  • 1 tablespoon mirin
  • 1 tablespoon grated ginger
  • 2 cloves garlic, minced

Main Ingredients

  • 500 g chicken thighs, boneless and skinless
  • 1 cup potato starch or cornstarch for dredging
  • Vegetable oil for frying sufficient for deep frying

Instructions
 

Preparation

  • Cut the chicken thighs into bite-sized pieces.
  • In a bowl, mix the soy sauce, sake, mirin, ginger, and garlic.
  • Add the chicken to the marinade and let it sit for at least 30 minutes.

Cooking

  • Heat oil in a deep fryer or large pot to 350°F (175°C).
  • Dredge the marinated chicken pieces in potato starch until well coated.
  • Fry the chicken in batches until golden brown and cooked through, about 4-6 minutes.
  • Remove from oil and drain on paper towels.

Serving

  • Serve hot with lemon wedges and dipping sauce.

Notes

For best flavor, marinate the chicken for at least 30 minutes. Monitor oil temperature while frying to avoid burning or greasiness. The internal temperature of the chicken should reach 165°F (74°C).
