Ingredients
  

Crust Ingredients

  • 1 cup almond flour
  • 1/4 cup butter, melted
  • 2 tablespoons erythritol or sweetener of choice Use a low-carb sweetener for keto.

Filling Ingredients

  • 1 cup peanut butter Can be substituted with almond butter.
  • 1 cup heavy cream For dairy-free, use coconut cream.
  • 1/2 teaspoon vanilla extract
  • 1/2 cup powdered erythritol
  • 1/4 cup unsweetened cocoa powder (optional) For a chocolate variation.

Instructions
 

Preparing the Crust

  • Preheat your oven to 350°F (175°C).
  • In a bowl, combine almond flour, melted butter, and erythritol to form the crust.
  • Press the mixture into the bottom of a pie dish and bake for 10-12 minutes until lightly golden.

Making the Filling

  • In another bowl, mix peanut butter, heavy cream, vanilla, and powdered erythritol until smooth.
  • If using cocoa powder, add it to the mixture and blend until combined.
  • Pour the peanut butter mixture onto the cooled crust and smooth the top.

Setting the Pie

  • Refrigerate for at least 4 hours to set before serving.

Notes

Serve chilled with toppings like whipped cream, chopped nuts, or sugar-free chocolate syrup. Store leftovers tightly covered in the refrigerator for up to a week, or freeze for longer storage.
