  • Olive oil
  • Salt and pepper to taste

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Toss diced potatoes with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes until crispy.

Cooking

  • In a skillet, brown the ground meat over medium heat, draining any excess fat.
  • Add taco seasoning and water according to the packet instructions. Simmer until well combined.

Assembly

  • In a serving bowl, layer the crispy potatoes, taco meat, cheese, sour cream, salsa, diced tomatoes, and avocado.
  • Garnish with fresh cilantro and serve.

Notes

Store leftovers separately in airtight containers for 3 to 4 days. Reheat the potatoes and meat, and assemble fresh with toppings. Consider adding spices like cumin or chili powder for extra flavor. Use pre-cooked potatoes or frozen hash browns to save time.
