Ingredients
  

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1/4 teaspoon salt
  • 1 lb lean beef mince
  • 1/4 cup beef stock
  • 2 tablespoons gluten-free Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon sugar
  • 1 head romaine lettuce, torn
  • 1 avocado, sliced
  • 2 tablespoons chopped fresh dill
  • 2 small pickles, chopped
  • Celtic or sea salt to taste

Instructions
 

  • Heat oil in skillet, sauté onions with salt until translucent
  • Add beef and cook until browned
  • Stir in stock, Worcestershire, mustard, and sugar
  • Cook until liquid reduces and beef thickens
  • Season with additional salt
  • Toss romaine with 1 tbsp oil
  • Divide romaine into bowls, top with beef mixture
  • Add avocado, dill, pickles, and drizzle with reserved pan juices

Notes

Shake off excess beef fat for lower fat content
Use lime juice instead of dill for tangy brightness
Serve with tangy pickled garnishes
Substitute beets for pickles if preferred
