Ingredients
  

Main ingredients

  • 1 pound Chicken breast, cut into bite-sized pieces
  • 1 cup Bell peppers, chopped Use a mix of colors for better presentation.
  • 1 medium Zucchini, sliced
  • 1 medium Red onion, chopped
  • 1/2 cup Olives, pitted and sliced Kalamata or green olives can be used.
  • 2 cloves Garlic, minced
  • 2 tablespoons Olive oil Can substitute with other oils if preferred.
  • 2 teaspoons Mediterranean herbs (oregano, thyme, basil) Adjust based on preference.
  • to taste Salt
  • to taste Pepper

Instructions
 

Preparation

  • Cut the chicken breast into bite-sized pieces and season with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat.

Cooking

  • Add the chicken to the skillet and cook until browned and cooked through, about 5-7 minutes.
  • Remove the chicken and set it aside.
  • In the same skillet, add chopped bell peppers, zucchini, and red onion. Sauté for about 5 minutes until the vegetables soften.
  • Add minced garlic and olives, cooking for another 1-2 minutes.
  • Return the chicken to the skillet and sprinkle with Mediterranean herbs.
  • Toss everything together and cook for an additional few minutes to combine the flavors.
  • Serve hot and enjoy your Mediterranean feast!

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stovetop before serving. For a vegetarian version, replace the chicken with tofu or chickpeas.
