  • 1/2 cup Kalamata olives Pitted and halved.
  • 1/2 cup sun-dried tomatoes Chopped.
  • 1/2 cup feta cheese Crumbled.

Dressing Ingredients

  • 1/4 cup olive oil
  • 2 tablespoons lemon juice Freshly squeezed.
  • 2 cloves garlic Minced.
  • 1/2 teaspoon salt Adjust to taste.
  • 1/4 teaspoon pepper Adjust to taste.

Preparation

  • Blanch the green beans in boiling water for 3-4 minutes until tender-crisp. Drain and cool in ice water.
  • In a large bowl, combine the green beans, Kalamata olives, sun-dried tomatoes, and feta cheese.

Making the Dressing

  • In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper.

Combining

  • Pour the dressing over the salad and toss gently to combine.
  • Serve chilled or at room temperature.

Notes

For a crunchier texture, do not overcook the green beans. Feel free to add more vegetables like bell peppers or cucumbers for extra color and nutrients. If you like it a bit spicy, add a pinch of red pepper flakes to the dressing. The salad can stay fresh in the refrigerator for up to three days in an airtight container.
