  • 2 pieces Chicken breasts Boneless, skinless
  • 1 cup Rice White or brown, adjust cooking time for brown rice
  • 1 can Black beans Drained and rinsed
  • 1 cup Corn Frozen corn is convenient
  • 1 bunch Cilantro Chopped
  • 1 cup Cheese Shredded cheese of choice
  • 1/2 cup Cilantro Lime Dressing Store-bought or homemade
  • to taste Salt For seasoning chicken
  • to taste Pepper For seasoning chicken

Preparation

  • Place the chicken breasts in the slow cooker and season with salt and pepper.
  • Add rice, black beans, corn, and chopped cilantro.
  • Pour the Cilantro Lime Dressing over the mixture.
  • Cover and cook on low for 6-8 hours or on high for 4 hours.
  • Once cooked, shred the chicken and stir everything together.

Serving

  • Serve topped with diced avocado and cheese.
  • Optionally add extra toppings like sour cream or salsa.

Notes

Store leftovers in an airtight container in the fridge for up to three days or freeze for up to two months. Let cool before sealing. For extra flavor, marinate chicken in the dressing the night before. For spicy variation, add jalapeños or cayenne pepper.
