One Pan Honey Garlic Kielbasa and Veggies Sheet Pan Dinner

Ingredients
  

  • Kielbasa sausage, smoked Polish-style, beef or chicken (halal-friendly), 1 lb, sliced into 1/2-inch pieces
  • Baby potatoes, 1 lb, halved or quartered to ~1-inch pieces
  • Broccoli, 1 head, cut into medium florets
  • Red bell pepper, 1, chopped into 1-inch pieces
  • Red onion, 1, cut into wedges
  • Olive oil, 2 tbsp
  • Honey, 1/4 cup
  • Garlic, 3 cloves, freshly minced
  • Low-sodium soy sauce, 2 tbsp

Instructions
 

  • Preheat oven to 425°F (220°C)
  • Place the kielbasa, potatoes, broccoli, bell pepper, and onion on a large sheet pan
  • Toss all vegetables and kielbasa with olive oil and season with salt and pepper
  • Arrange in a single layer and roast for 20 minutes
  • While roasting, mix honey, garlic, and soy sauce in a small bowl
  • Remove the pan from the oven and reduce oven heat to 375°F (190°C)
  • Brush the honey garlic mixture evenly over the kielbasa and vegetables
  • Return to the oven for 5–10 minutes, or until the mixture is caramelized and the vegetables are tender
  • Serve warm

Notes

Kielbasa can be switched to a chicken or halal sausage for dietary preferences
For a gluten-free option, use tamari instead of soy sauce
If the sauce becomes too thick, add a little water to thin it slightly
