Ingredients
  

For the Chicken

  • 2 pieces chicken breasts Fresh or thawed
  • 1 cup grated Parmesan cheese For coating the chicken
  • Salt and pepper to taste
  • 2 tablespoons Olive oil For cooking

For the Salad

  • 1 head romaine lettuce, chopped
  • 1 cup homemade croutons Can use store-bought if short on time
  • 1/2 cup Caesar dressing Can use homemade

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Season the chicken breasts with salt and pepper.
  • Coat the chicken in Parmesan cheese.

Cooking

  • Heat olive oil in a skillet over medium heat and sear the chicken on both sides until golden.
  • Transfer the chicken to a baking sheet and bake in the oven for 20 minutes or until cooked through.

Assembly

  • While the chicken is baking, prepare the salad by combining the romaine lettuce, croutons, and Caesar dressing in a large bowl.
  • Once the chicken is done, let it rest for a few minutes before slicing.
  • Top the salad with sliced chicken and additional Parmesan cheese if desired.
  • Serve immediately.

Notes

Store leftovers separately in airtight containers. Chicken should be eaten within 3 days; salad can last 2 days. Reheat chicken before mixing back into salad.
