  • 1 cup pineapple chunks Can be fresh or canned.
  • 1/2 cup peanut butter Adjust to taste.
  • 1/4 cup soy sauce Use low-sodium if preferred.
  • 1 tablespoon ginger, minced Fresh ginger for best flavor.
  • 2 cloves garlic, minced Adjust according to taste.
  • 1 tablespoon vegetable oil For cooking the chicken.
  • to taste salt and pepper For seasoning.
  • Green onions for garnish Optional, for serving.

  • In a large skillet, heat vegetable oil over medium heat.
  • Add diced chicken breast, and season with salt and pepper. Cook until chicken is browned and cooked through, about 5-7 minutes.
  • Stir in minced garlic and ginger, cooking for an additional minute.
  • Add pineapple chunks, peanut butter, and soy sauce, stirring until the peanut butter is melted and combined.
  • Mix in the cooked rice, ensuring everything is well combined.
  • Cook for another 2-3 minutes until heated through.
  • Serve hot, garnished with green onions if desired.

Notes

Store leftovers in an airtight container for up to 3 days in the refrigerator or freeze for up to 2 months. Add a bit of water when reheating to prevent drying out.
