  • Wild Gulf shrimp (large), thawed and deveined (6-8)
  • Olive oil (2 tbsp, divided)
  • Garlic, minced (3 cloves)
  • Paprika (1 tsp)
  • Dried oregano (1 tsp)
  • Lemon juice (1 lemon, juiced)
  • Salt and pepper (to taste)
  • Fresh parsley, chopped (2 tbsp)
  • Mixed greens (2-3 cups)
  • Cooked rice (2 cups, any variety)
  • Feta cheese (1/2 cup, crumbled)
  • Cucumber, thinly sliced (1/2 cup)
  • Cherry tomatoes, halved (1/2 cup)
  • Red onion, finely sliced (1/4 cup)
  • Capers (1 tbsp, rinsed if needed)
  • Tzatziki sauce (store-bought or homemade)
  • Lemon wedges (optional, for serving)

Instructions
 

  • Heat 1 tbsp olive oil in a skillet over medium-high heat. Sear shrimp with garlic, paprika, oregano, lemon juice, salt, and pepper.
  • Cook shrimp for 2-3 minutes per side until opaque and seared.
  • Assemble bowls with a base of warm rice, layered mixed greens, cucumber, cherry tomatoes, red onion, and crumbled feta.
  • Add seared shrimp on top and finish with capers, drizzled olive oil, and a dollop of tzatziki.
  • Garnish with chopped parsley and lemon wedges if desired.

Notes

Cook rice and prepare toppings ahead of time for efficient meal prep.
Store assembled bowls in airtight containers in the fridge for up to 3 days.
For meat-free option, substitute shrimp with grilled tofu or chickpeas.
Swap feta with halloumi or dairy-free cheese alternative if needed.
