  • 1 small head small head of cabbage, shredded
  • 2 tablespoons butter
  • 1 medium onion, chopped
  • Salt and pepper to taste

Preparation and Cooking

  • Boil the diced potatoes in salted water until tender, about 15-20 minutes. Drain and mash with butter.
  • In a separate pan, sauté the chopped onion until soft, then add the shredded cabbage and cook until wilted.
  • Mix the cooked cabbage and onion into the mashed potatoes, seasoning with salt and pepper.
  • Transfer the mixture to a baking dish, top with cheese if desired, and bake at 375°F (190°C) for 30 minutes until golden and bubbling.

Notes

Serve Rumbledethumps hot as a main dish or side dish. It pairs well with meats and is enjoyable alongside a fresh salad. To store leftovers, allow it to cool completely, then place in an airtight container; it can be kept in the refrigerator for up to three days. Freeze for longer storage, thawing in the fridge overnight before reheating. For creamier mashed potatoes, add a splash of milk or cream. Experiment with different cheeses for topping and include other vegetables like carrots or green onions for added flavor.
