Ingredients
  

For the Filling

  • 1 tablespoon Olive Oil (or avocado oil for a lighter option)
  • 1 medium Onion (yellow or white)
  • 1 cup Bell Peppers (any color)
  • 1 can Beans (black or pinto), drained
  • 1 teaspoon Cumin (adjust for spiciness)
  • 1 teaspoon Chili Powder (increase for spice)
  • Salt, to taste

For Assembling

  • 4 large Tortillas (warm to avoid tearing)
  • 1 cup Shredded Cheese (cheddar or pepper jack for spice)
  • 1 cup Salsa (any type)
  • 1/2 cup Sour Cream (or Greek yogurt as a substitute)

Preparation

  • Heat the olive oil in a large skillet over medium heat. Add the diced onion and bell peppers, and sauté for about 5 minutes until softened.
  • Stir in the beans, cumin, chili powder, and salt. Cook for another 2-3 minutes until heated through.

Assemble the burritos

  • Lay a tortilla flat on a plate. Spoon some of the bean and veggie mixture down the center. Top with a handful of shredded cheese, salsa, and a dollop of sour cream.

Wrap it up

  • Fold the sides of the tortilla over the filling and then roll from the bottom up to create a burrito shape.

Cook if desired

  • If you want a crispy burrito, place it seam-side down on the skillet and cook for 1-2 minutes on each side until golden brown.

Notes

Serve the burritos warm, accompanied by extra salsa and sour cream on the side for dipping. You can also sprinkle some chopped cilantro or avocado on top for garnishing. You can prepare the filling ahead of time and store it in the fridge. Just warm it up before assembling the burritos. Adjust the amount of chili powder and cumin based on your heat preference. Get creative with toppings like lettuce, diced tomatoes, or jalapeños.
