Ingredients
  

  • Chicken thighs, skinless (3.3 lbs)
  • Lo mein noodles (8 oz)
  • Honey (1/3 cup)
  • Lower-sodium soy sauce (1/4 cup)
  • Minced garlic (6 medium cloves)
  • Dark soy sauce (2 tablespoons)
  • Oyster sauce (2 tablespoons)
  • Sesame oil (1 teaspoon)
  • Sriracha chile sauce (1 tablespoon)
  • Shaoxing wine or dry sherry (1 tablespoon)
  • Cornstarch (2 tablespoons)
  • Low-sodium chicken broth (2 tablespoons)

Instructions
 

  • Pat chicken dry and add to slow cooker
  • Whisk together honey, soy sauces, garlic, sesame oil, sriracha, and chicken broth
  • Pour sauce over chicken and stir to coat
  • Cover and cook on HIGH for 3 hours or LOW for 5 hours
  • Remove chicken, shred into bite-sized pieces, and return to slow cooker
  • Mix cornstarch with 2 tablespoons water and stir into chicken mixture
  • Heat until sauce thickens, about 10 minutes
  • Add cooked noodles and toss to coat

Notes

For non-alcoholic version, replace Shaoxing wine entirely with low-sodium chicken broth
Use vegetable broth for vegetarian option
Canomitted dark soy sauce if preferred
Noodles can be replaced with rice or zucchini noodles
Sauce thickens rapidly so watch closely
Store leftovers in airtight containers for up to 3 days
