  • 1/4 teaspoon red pepper flakes Adjust for spice preference

For Serving

  • 4 cups cooked noodles (e.g., rice noodles or egg noodles)
  • Chopped green onions and cilantro For garnish

Preparation

  • In a slow cooker, combine the chicken thighs, peanut butter, coconut milk, soy sauce, honey, garlic, ginger, and red pepper flakes.
  • Mix well to coat the chicken evenly.

Cooking

  • Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender.
  • Once cooked, shred the chicken with two forks and stir it back into the sauce.

Serving

  • Serve the peanut chicken over cooked noodles and garnish with chopped green onions and cilantro.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for longer storage. Adjust red pepper flakes to suit your spice preference, and consider adding veggies like bell peppers or broccoli for extra nutrition.
