Ingredients
  

  • Turkey bacon, chopped
  • 6 slices
  • Small onion, finely diced
  • 1
  • Fresh jalapeños, diced (seeds removed)
  • 4-5
  • Garlic, minced
  • 3 cloves
  • Chicken broth
  • 4 cups
  • Cream cheese, softened and cubed
  • 1 (8 oz) block
  • Heavy cream
  • 1 cup
  • Shredded cheddar cheese
  • 2 cups
  • Smoked paprika
  • 1/2 teaspoon
  • Sourdough bread slices, for dippers
  • 6 slices
  • Mayonnaise
  • 1 tablespoon

Instructions
 

  • Heat Dutch oven over medium; cook turkey bacon until crispy (5-6 minutes). Remove bacon, add onion; sauté until translucent.
  • Stir in jalapeños and garlic, cook 1 minute before adding chicken broth.
  • Bring to simmer, reduce heat. Add cream cheese cubes, stirring until smooth.
  • Whisk in heavy cream, then remove from heat. Fold in shredded cheddar until melty and smooth.
  • Season with smoked paprika. Keep hot while preparing dippers.
  • Brush both sides of bread slices with mayonnaise. Heat skillet; cook slices until golden and cheese is melted (~3 minutes per side).
  • Serve soup in bowls topped with reserved bacon, with dippers alongside for dunking.

Notes

For vegetarian option: replace turkey bacon with smoked tempeh
Adjust jalapeño heat by adjusting seeds
Use low-sodium broth if needed
Store soup refrigerated up to 3 days
Dippers can be pinwheeled for serving
