  • 1 cup long-grain rice Rinse before cooking for fluffier grains.
  • 2 cups vegetable broth or water
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 1 red bell pepper, chopped
  • 2 tomatoes, diced
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish

  • In a large saucepan, heat the olive oil over medium heat.
  • Add the onion and red bell pepper, and sauté until softened.
  • Stir in the tomatoes, cinnamon, cumin, salt, and pepper; cook for a few minutes.
  • Add the rice, stirring to coat the grains with the mixture.
  • Pour in the vegetable broth or water, bring to a boil, then reduce heat to low and cover.
  • Cook for 15-20 minutes until rice is fluffy and liquid is absorbed.
  • Remove from heat, let it sit for 5 minutes before fluffing with a fork.
  • Garnish with fresh parsley or cilantro and serve.

Notes

This dish pairs well with grilled meats like chicken or lamb. Leftovers can be stored in an airtight container for 3-4 days. To reheat, add a splash of water and microwave or heat on the stove until warmed through.
