  • 2 pounds russet potatoes Peeled and cubed
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • ½ cup chopped green onions
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Preparation

  • Preheat your oven to 350°F (175°C).
  • Peel and cube the russet potatoes into bite-sized pieces.
  • Boil the potatoes in salted water until they are tender but not falling apart, about 10-15 minutes.
  • Drain the potatoes and let them cool slightly.
  • In a large bowl, mix together sour cream, shredded cheddar cheese, chopped green onions, garlic powder, salt, and black pepper.
  • Add the cooked potatoes to the bowl and gently mix until all the potatoes are coated.
  • Transfer the mixture to a greased baking dish.

Baking

  • Bake in the preheated oven for 25-30 minutes, until bubbly and slightly golden on top.
  • Remove from the oven and let it cool for a few minutes before serving.

Notes

Use fresh ingredients for the best flavor. You can add a bit of paprika or cayenne pepper for a kick of heat. For an extra creamy texture, add a little cream cheese to the sour cream mixture.
