Ingredients
  

  • Dairy-free plain thick coconut or cashew yogurt, 1 1/2 cups
  • Creamy cashew butter, 1/3 cup
  • Maple syrup, 2 tbsp
  • Plant-based unflavored or vanilla protein powder, 1-2 tsp
  • Vanilla extract, 1/2 tsp
  • Dairy-free chocolate chips, 1/2 cup
  • 1 small ripe banana, sliced
  • Grain-free or gluten-free granola, 1 tbsp
  • Fresh strawberries, chopped for topping

Instructions
 

  • Line an 8x8 inch baking dish with parchment paper and freeze the dish for 15 minutes
  • In a bowl, mix yogurt, cashew butter, maple syrup, protein powder (if using), and vanilla until smooth
  • Spread half the mixture in the dish
  • Sprinkle chopped strawberries, banana slices, and a spoonful of granola
  • Drizzle melted chocolate (melt 1/2 cup over low heat with 1/4 tsp coconut oil if needed) over the remaining half of the mixture
  • Spread chocolate layer and press granola into it
  • Freeze until firm (at least 3 hours), then cut into 8 pieces

Notes

For non-dairy-free version: use full-fat Greek yogurt instead
Use ripe but firm bananas for better stability
Granola helps create structural integrity
Store in air-tight container for up to 3 weeks
Chocolate can be dark (50-70%) or lightened with cacao butter instead of oil
