Ingredients
  

  • Strawberries, chilled, tops cut off - 3 cups
  • Fresh mint, chiffonade or chopped fine - 2 tablespoons
  • Watermelon, chilled, seedless if possible, cubed - 3 cups
  • Chia seeds - 1/2 teaspoon
  • Feta cheese, crumbled - 1/2 cup
  • Olive oil - 2 tablespoons
  • Fresh lime, juiced - 1 whole
  • Honey, or maple liquid type - 1 1/2 teaspoons

Instructions
 

  • 1. In a large bowl, combine strawberries, watermelon cubes, and mint.
  • 2. In a small bowl, whisk together lime juice, olive oil, and honey until emulsified.
  • 3. Pour dressing over fruit and feta cheese, gently tossing to coat.
  • 4. Sprinkle chia seeds over the salad and adjust seasoning with salt if needed.

Notes

Use ripe strawberries for optimal sweetness.
Replace feta with crumbled goat cheese for creamier texture.
Toasted sesame seeds work as a dairy-free crunch substitute.
Dressing can be made up to 2 hours ahead but toss with protein additives shortly before serving to maintain fruit texture.
