Ingredients
  

  • 3 cups cooked chicken, shredded or diced (rotisserie recommended)
  • 1 cup corn kernels (fresh, frozen or canned)
  • 1 large cucumber, diced small
  • 1/2 red onion, finely diced
  • 1/4 cup fresh cilantro, chopped (stems removed)
  • 1 jalapeño, finely diced (optional, seeds removed for milder heat)
  • 1/2 cup cotija cheese, crumbled (or feta as substitute)
  • 1/2 cup mayonnaise (light mayo optional)
  • 1/4 cup sour cream or Greek yogurt (Greek yogurt recommended)
  • 1 fresh lime, juiced
  • 1 garlic clove, minced
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions
 

  • Dice the cucumber, red onion, and jalapeño (if using). Place in a large mixing bowl.
  • Soak the red onion in cold water for 5 minutes to mellow the sharpness; drain and pat dry before proceeding.
  • Add the corn kernels and cooked chicken to the bowl.
  • In a separate small bowl, whisk together mayonnaise, Greek yogurt, lime juice, minced garlic, chili powder, salt, and pepper.
  • Pour the dressing over the chicken and vegetable mixture. Add the crumbled cotija cheese.
  • Stir to evenly coat the chicken and vegetables. Fold in chopped cilantro.
  • Chill the salad in the refrigerator for at least 30 minutes before serving to allow flavors to meld and the texture to settle.

Notes

Use rotisserie chicken for quick and flavorful results.
Fresh corn is ideal but canned or frozen works well.
Soaking the onion helps reduce its sharpness.
This salad is best when made ahead and chilled for optimal flavor.
Store in an airtight container in the fridge for up to 2 days.
