  • 8 whole Whole green chiles Use canned or roasted fresh chiles.
  • 1 cup Pepper Jack cheese Shredded.
  • 1 cup Cheddar cheese Shredded.
  • 3 large Eggs
  • 1 cup Milk

Baking mixture

  • 1 cup Flour
  • 1 tbsp Baking powder
  • 1 tsp Salt
  • 1/2 tsp Pepper

Preparation

  • Preheat the oven to 350°F (175°C).
  • Grease a casserole dish.
  • Layer the whole green chiles in the dish.

Mixing

  • In a bowl, whisk together eggs, milk, flour, baking powder, salt, and pepper until well combined.
  • Pour the egg mixture over the chiles, ensuring they are evenly covered.

Baking

  • Sprinkle the Pepper Jack and cheddar cheeses on top.
  • Bake for 30-40 minutes or until the casserole is set and golden on top.
