For the Soup

  • 2 tablespoons Olive Oil Can substitute with canola oil.
  • 1 pound Ground Italian Sausage Or Beef; ground turkey or plant-based sausage can be used.
  • 1 cup Chopped Onion Shallots can be used.
  • 3 cloves Minced Garlic Fresh garlic is preferred.
  • 4 cups Chicken Broth Use vegetable broth for vegetarian version.
  • 14.5 oz Diced Tomatoes Fire-roasted tomatoes can add flavor.
  • 2 teaspoons Italian Seasoning Blend dried herbs like oregano, basil, and thyme.
  • 1/4 teaspoon Red Pepper Flakes Optional for a spicy kick.
  • to taste Salt Adjust to your taste.
  • to taste Pepper Adjust to your taste.
  • 9 oz Lasagna Noodles (broken into pieces) Any pasta shape can work.
  • 1 cup Heavy Cream Half-and-half can be a substitute.
  • 1 cup Grated Parmesan Cheese Nutritional yeast can be a dairy-free alternative.
  • 2 cups Fresh Spinach Or Kale; Swiss chard is a great swap.
  • to taste Fresh Basil or Parsley For garnish, optional.

Instructions
 

Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add the ground sausage, cooking until browned, about 5-7 minutes.
  • Stir in the chopped onion and minced garlic. Cook until the onion is soft, about 3 minutes.
  • Pour in the chicken broth and diced tomatoes. Add the Italian seasoning, red pepper flakes, salt, and pepper. Bring to a boil.
  • Add the broken lasagna noodles, cooking until tender, about 10 minutes.
  • Reduce the heat, and stir in the heavy cream and grated Parmesan cheese. Mix until well combined and creamy.
  • Add the fresh spinach and cook for another 2-3 minutes until wilted.
  • Serve hot, garnishing with fresh basil or parsley if desired.

Notes

For added flavor, try using homemade broth instead of store-bought. If you want extra veggies, feel free to add bell peppers or zucchini. Make it ahead of time; this soup tastes even better the next day as the flavors meld together. Store any leftovers in an airtight container in the fridge for up to 3 days. To reheat, simply warm it on the stove over low heat, stirring occasionally until heated through. If the soup is too thick after storing, add a little broth or water to thin it out.
